Regular consumption of fruits and vegetables represent a healthy way to maintain a balanced diet and youthful appearing skin. Lycopene is a a powerful antioxidant, believed to prevent skin photo-damage. With promising studies highlighting its benefits on skin health, not to mention heart health.

Finding healthy meals during the week can be time consuming. Below we outline an lycopene abundant tomato passata which can be used as the base for many meals. Batch cook this sauce and freeze, ready to use anytime. Cutting out the need to buy ready made pasta sauces, which often have added sugar and salt.

The below recipe also contains monounsaturated fatty acids which benefit our heart and skin health. Additionally, the fat (oil) component assists with the absorption of lycopene and vitamin A.

Ingredients

1 onion finely chopped
5-6 cloves garlic – crushed (waiting 10 mins ahead of cooking)
5 tablespoons virgin olive oil or rapeseed oil (vegetable oil)
3-4 cans chopped tomatoes – or fresh tomatoes chopped
2 tablespoons tomato purée
3-4 red peppers – finely diced
1 tablespoon oregano
1 tablespoon thyme
salt and pepper to taste

Method for Cooking

1. Heat on medium oil in a pan and add in onion, sautée for 10 minutes being careful not to burn (turn down heat and use lid if needed – the goal is the onion is translucent).
2. Add garlic and cook 2-3 minutes
3. Add Peppers and cook for 5-6 minutes until soft
4. Add in chopped tomatoes and cook for 5 minutes
5. Add in tomato purée and herbs and seasoning – cook for additional 25 minutes on a low heat
6. Taste and season if necessary
7. Allow to cool and divide into glass jars and freeze (allowing room for fluid to expand).

This wonderfully rich tomato sauce can be used as a base for pasta’s. Once you have easy access this staple, it makes fast healthy nutritious meals accessible for everyone!

Our favourite it to serve with sustainably sourced seafood such as a Prawns and linguine. To increase the fibre and antioxidants mix the pasta with greens such as rocket or spinach (they will wilt with the heat) and squeeze fresh lemon and chilli on top. Serve with crunchy fresh salad.
